Are you hungry yet?


Comforting Broccoli Casserole
2 eggs, lightly beaten
1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
1 medium onion, chopped
1 cup (4 ounces) shredded cheddar cheese
1 cup (4 ounces) shredded Swiss cheese
1/2 cup mayonnaise
2 tablespoons butter, melted
1 package (16 ounces) frozen broccoli cuts, thawed
1 package (10 ounecs) frozen chopped broccoli, thawed
1/4 cup dry bread crumbs

In a large bowl, combine the first seven ingredients; fold in broccoli. Transfer to a greased 1-1/2 qt. baking dish. Sprinkle with bread crumbs. Cover and bake at 400 degrees for 30-35 minutes or until heated through. Yield: 8 servings.


The day Mom's latest Taste of Home magazine came I was drooling over all the new recipes and wishing I had more time to cook when I suddenly remembered that I had just gotten my October work schedule and had a whole week of early hours (7:30-4), so I got permission to cook suppers for a week :). Both of these new recipes were very popular in our house!! :)

Pizza Meatball Subs
1 egg, lightly beaten
1/3 cup steak sauce
1 cup crushed saltines
1 teaspoon onion powder
1/4 teaspoon seasoned salt
1/8 teaspoon pepper
1-1/2 pounds ground beef
6-7 tablespoons mayonnaise
6-7 submarine buns, split
9 to 11 slices process American cheese, cut into strips
1 jar 914 oounces) pizza sauce
2 cups (8 ounces) shredded part-skim mozzarella cheese

In a large bowl, combine the egg, steak sauce, saltines, onion powder, salt and pepper. Crumble beef over mixture and mix well. Shape into 1-1/2 in. balls.

Place meatballs on a greased rack in a foil-lined 15-in. x 10-in. x 1-in. baking pan. Bake at 375 degrees for 20-25 minutes or until no longer pink. Drain on paper towels.

Spread mayonnaise over bun bottoms; top each with American cheese, 1 tablespoon pizza sauce, meatballs and remaining pizza sauce. Sprinkle with mozzarella cheese. Place on a baking sheet. Bake for 5-10 minutes or until cheese is melted. Yield: 6-7 servings.
